Herbed Cauliflower Crust

Each new year, I decide to start over with eating healthy. Like everyone else, I eat like a man over the holidays and my pants don’t fit by the New Year. It doesn’t matter how badly I want to get back in shape, I still have major cravings for naughty food.

Pizza is always and forever going to be my favorite comfort food. It’s what I turn to when I want to celebrate, what I indulge in after a long day and what I scarf down when I’m intoxicated. It’s my go-to.

While this Herbed Cauliflower Pizza Crust is not the real deal, it is the PERFECT vehicle for pizza toppings, which makes me feel happy. It also tastes super yummy, which gives me hope while I’m trying to get back on track.

The fun part? You can add whatever the heck you want on top of this, treat it like pizza crust!  I chose vegan cheese and all veggies in order to stick with our 6-week vegan/vegetarian cleanse.

Herbed Cauliflower Crust

A healthy version of pizza.

My pizza is a white pizza with vegan cheese, spinach, tomatoes and onions. Choose whatever toppings you would like.

Ingredients

  • 1 small head of cauliflower
  • 2 eggs {use egg substitute for vegan}
  • 1/2 cup grated Parmesan cheese {omit for vegan}
  • 1 tablespoon dried Italian seasoning
  • 2-3 smashed garlic cloves
  • 1/2 teaspoon salt
  • pepper to taste
  • crushed red pepper {optional}
  • topping suggestions: tomato sauce, cheese, onions, olives, spinach, basil, etc.

Directions

  1. Preheat oven to 475.
  2. Place parchment paper on pizza pan.
  3. Add cauliflower to food processor until finely ground. Place ground cauliflower in glass bowl with 1/4 cup water. Cover bowl with plastic wrap. Microwave for 5 minutes.
  4. Uncover bowl and let cauliflower cool off for 5 minutes.
  5. Pour the cauliflower onto a {thin} clean kitchen towel and squeeze out as much liquid as possible {Be careful, the liquid may be hot}.
  6. Add the drained cauliflower back to the bowl and mix in eggs, Parmesan cheese, herb seasoning, salt, pepper, crushed red pepper and garlic.
  7. Spread the cauliflower mixture into a 12-inch-wide circle on the parchment.
  8. Bake until the cauliflower crust is barely golden and darker at the edges, about 20 minutes.
  9. Add your desired toppings and sauce. Bake again for 5-10 more minutes until toppings are cooked to your liking.
