Sometimes I get random cravings for Costco Rotisserie Chicken. We would buy one and eat it with rice and pickles. Never throw away the carcass! Save and make soup.
For this cook, I made Súp Nui Gà, Vietnamese Chicken Macaroni Soup, with the leftover carcass and shredded chicken meat. Súp Nui Gà is a simple and comforting Vietnamese chicken macaroni soup known for its mild yet savory flavor.
After making the broth, I strained and chopped up the tender carrots, daikon, and onion, and added them back into the soup before preparing bowls of hearty Súp Nui. So good and comforting.
I love the chewy texture of rice macaroni and love using it for this soup, but you can use any kind of pasta you like or have available that sucks up all the soup.
Ingredients:
1 package of rice macaroni, or your favorite pasta
1 Rotisserie Chicken, bone and meat removed
4 quarts water
1 pound carrots, peeled and chopped
1 pound daikon, peeled and chopped
1 yellow onion
1 knob ginger
¼ cup @khomarket dried shrimp
¼ cup fish sauce
1 tablespoon salt, season to taste
1 piece rock sugar
Toppings and Garnishes Ingredients:
Green Onions, chopped
Cilantro, chopped
Lime
Black pepper
Fried shallots
Chili garlic sauce
Steps:
Make Broth- Fill a large stockpot with water. Gently add rotisserie chicken bones, dried shrimp, onion, carrots, ginger, daikon, rock sugar, and salt to the stockpot and bring to a boil. Lower heat and simmer on medium heat for at least half an hour or until veggies are tender. Season with fish sauce and additional seasonings. Strain broth. Chop cooked onions, carrots and daikon into bite sized pieces and add it back into the broth.
Make Rice Macaroni – Cook rice macaroni in boiling water according to package instructions. Strain. Add a little oil and fried shallots and mix well.
Assemble Súp Nui Gà with Rotisserie Chicken– Add rice macaroni to a bowl. Top with shredded rotisserie chicken and green onions. Pour boiling broth and veggies into the bowl. Top with your favorite toppings and garnishes.
Tips:
- Substitute 1-2 teaspoons of sugar for rock sugar. However, I think rock sugar gives it a distinct Vietnamese noodle soup taste.
- If you can’t find rice macaroni, any macaroni like shells or elbow works great!
- Bowls are super customizable. Add other noodle soup ingredients you like
- When you remove the chicken meat from the bones, you can either shred or chop the meat for the soup.
- Freeze leftover soup and reheat it whenever you want broth!
