Add the water and sugar in the jar. You can also use honey instead of sugar to sweeten the juice. Pulse the ingredients at a high speed for about 5 to 10 minutes till they are mixed well. If you feel the juice is too thick, then add another cup of water and blend it again. Pour the juice in a tall glass, garnished with a slice of pineapple and enjoy it chilled.

  • Fresh ginger, peeled and coarsely chopped, 1
  • Peeled fresh lemongrass, coarsely chopped, ¼ cup

Peel the pineapples and cut them into medium-sized chunks. Put them in a large saucepan and add 6 cups of water. Place the saucepan over medium heat and bring it to boil. Once the water starts boiling reduce the heat and allow the fruit to simmer for about half an hour. You can also use a Dutch oven for this purpose. Once the pulp has been formed, drain the liquid in a colander and allow it to cool down. Meanwhile, take a food processor container and add the coarsely chopped lemongrass and ginger, along with a few tablespoons of water. Process the ingredients till they are finely chopped. Place the mixture in a cheese cloth and tie it up. Soak this cheesecloth in a bowl of water for about 30 minutes. After this squeeze the cloth to strain the juice. Mix this with the pineapple juice and stir in the sugar. Take a tall glass and put a few ice cubes. Pour the juice and garnish it with mint sprigs for a refreshing beverage.
